Michelin-starred chef Eric Ripert encourages chefs to expand their spice rack with exotic spices, such as North African harissa or the French blend quatre epices, and use common spices in new ways, such as sprinkling curry powder on salad. "Spices are essential in that they bring excitement to a dish, Ripert said. "Without spices, a dish sometimes is lacking in soul."
