Low-carb diets eyed as cause of drop in women's folate levels

Health officials say they have observed a disturbing drop in blood levels of folate in young women and they worry the shift could be the result of low-carb diets or the popularity of unfortified whole-grain breads. Folate deficiencies have been linked to serious birth defects and the government has long urged women to consume breads and cereals fortified with folic acid to reduce the risk of birth defects.
