In 2012, restaurants once again have eyes for potatoes

Several restaurant analysts predicted that 2012 will be the year of the potato, with restaurants offering variations of french fries, twists on mashed potatoes and custom toppings for baked potatoes. "Watch out for french fry menus that let guests choose the cut, crispness, and sauce; make-your-own mashers with mix-ins; or custom-cut chips with dusts and dips to order," according to a food-trend report from consultant Andrew Freeman & Co.
