Susan Brown owns Mademoiselle Honey, French for "Miss Honey," in St. Paul, Minn., which specializes in making chocolate from honey produced by her own bees. Brown's 20 roof-top bee hives produce up to 4,000 lbs. of honey a year, half of which she uses to create her bonbons that are sold in 15 local retail shops and restaurants; half of her sales are through her website.
