Chef Alex Atala's mission to advance Brazilian cuisine

Latin America's star chef Alex Atala, owner of famed D.O.M. restaurant in Sao Paulo, Brazil, is dedicated to bringing regional, Amazonian cuisine into the spotlight with dishes featuring rainforest insects and jungle herbs. Atala opened the ATA Institute, which aims to make the local food industry more sustainable and accountable. "I do believe that South American, Latin American and mainly Amazonas is the new frontier -- in the sense of flavor, in the sense of textures, in the sense of diversity," Atala said.
