Latin America's star chef Alex Atala, owner of famed D.O.M. restaurant in Sao Paulo, Brazil, is dedicated to bringing regional, Amazonian cuisine into the spotlight with dishes featuring rainforest insects and jungle herbs. Atala opened the ATA Institute, which aims to make the local food industry more sustainable and accountable.
