High-fiber banana powder shows promise for functional foods

Researchers were able to create high-fiber banana powder that can be used as an ingredient to enhance the fiber and nutrition content of food. The fiber-rich powder was derived from liquefied commercial unripe bananas mixed with an alpha-amylase enzyme.
