U.S. butter consumption hits highest level in 40 years

U.S. butter consumption has hit a 40-year high with per-capita consumption reaching 5.6 pounds in 2012, up from the 4.1-pound low in 1997, according to the American Butter Institute. The growth in consumption has been driven by a better understanding of health hazards associated with processed alternatives such as margarine, including a campaign by the Food and Drug Administration against the use of trans fats.
