More mobile eateries expand to permanent spots

Several New York City food trucks have been so successful, they are launching brick-and-mortar establishments. The owners of Schnitzel & Things, which will open in March, say demand for its $8 and $10 cutlets was outpacing the truck's capacity, and a permanent restaurant will allow the company to end a commercial kitchen lease and prepare food in its own restaurant.
