Sichuan chefs promote benefits of traditional cuisine

Chefs in China's Sichuan province have been hosting cooking classes and partnering with tourism officials to promote the area's traditional cuisine, which starts with local ingredients to create more than 5,000 spicy dishes. The organized efforts aim to expand the cuisine's appeal to Western consumers, whose knowledge of it often begins and ends with Kung Pao chicken.
