Homaro Cantu, owner of modernist restaurants Moto and Ing in Chicago's Fulton Market district, likes to do things a little differently in the kitchen. The inventive chef holds six patents, and his restaurants features feats of molecular gastronomy such as edible menus and a Cuban sandwich in the shape of a cigar.
