Some Colo. schools already eliminate trans fats:

Officials in some Colorado schools say they already are adhering to a proposed statewide ban on the use of trans fat in foods served at school. In the Poudre School District, turkey is the only food served with trans fat. However, while most schools have a salad bar, officials say not enough students fill their plates with healthy fruits and vegetables in place of unhealthy options, such as pizza, nachos and chicken wings.
