Ford: School nutrition professionals are trying to make food "fun"

At the recent Child Nutrition Industry Conference, hosted by the School Nutrition Association, Michael Katz, faculty instructor at The Culinary Institute of America, said that presentation is important in encouraging students to eat healthy food. Sandra Ford, president of the School Nutrition Association, said nutrition professionals are "trying to have fun" as they work to comply with federal meal standards. Katz suggested unique flavor pairings and approaches and demonstrated by making a risotto using steel-cut oats and a quiche, which also included Swiss chard.
