Eateries spread the joy of umami

Umami, known as the "fifth taste," is hard to describe, but a growing number of eateries find diners crave it even if they can't name it. Upscale Asian menus have a slew of ingredients that are heavy on umami, including soy sauce and fish sauce, and a growing number of less-pricey eateries including Umami Burger and Jogasaki Sushi Burrito are exploring hybrid dishes that are heavy on the umami.
