Kosher demand increases as food-safety concerns continue

Concern over food safety is one reason consumer demand is increasing for kosher products. Consumers, particularly those with food allergies and sensitivities, also have begun to rely on the kosher label to help them identify and avoid certain ingredients. Some manufacturers say the demand makes kosher certification a must.
