Vosges founder inspired by "much-needed innovation"

Vosges founder Katrina Markoff, who attended Le Cordon Bleu and worked at elBulli, saw opportunity for a high-end chocolate company. "I realized that there was nothing really innovative and nothing particularly high quality," she said. "Everything was loaded with preservatives or some kind of weird flavoring. There was this huge hole in the chocolate space that called out for innovation."
