Quinoa and buckwheat can boost gluten-free nutrition

Incorporating quinoa and buckwheat in gluten-free products can enhance the nutritional profile more than the rice, corn and potato flours used in many gluten-free formulations, a study found. Researchers said bread made using quinoa and buckwheat had significantly higher nutritional content in terms of antioxidants and polyphenol than wheat bread.
