A chef in Virginia has been working with the Manassas district since last year to help schools create healthy meals. While Charles Gilliam, owner of Okra's Louisiana Bistro, said the strict nutritional standards presented a challenge, on Friday he served students a Cajun-inspired meal of red beans and rice, a corn dish called maque choux and corn bread. Gilliam said he and school nutrition professionals are collaborating to create "more exciting recipes to encourage students to eat healthier food and expand their dining habits."
