For dinner and a show, roll out the cheese trolley

Cheese is an important matter for chef Alain Ducasse, owner of nearly 20 restaurants, including the three-Michelin-starred Ducasse in London. The London establishment boasts a hand-selected cheese board, but in France, nothing but the cart will do. "I think the other reason restaurants have cheese trolleys is because of the theater it offers the staff. ... It is one of the few things that offer them a chance to perform and show off their knowledge, so they enjoy it too," he said.
