Fruit, vegetable consumption is up in Md. district

The food-service manager for a Maryland district says she and her staff have been successful in making nutritious food appealing to students -- so much so that she had to increase the amount of fruit and vegetables available because students were eating so much of them. Cucumber rounds, apples, mandarin oranges and raw zucchini sticks have been popular, said Judith Gordon, who also is a registered dietitian. But the students don't eat cauliflower, she said.
