Tagatose is seen as next generation of sweetener

A study found tagatose can provide both sweetness and prebiotic benefits to acidic drinks. Tagatose, which is chemically similar to fructose, is low-calorie, tooth-friendly and only minimally absorbed in the upper gastrointestinal tract. There are stability issues that need to be considered before adding tagatose to products, the researchers said.
