Bread Lab bakers experiment to create the perfect loaf

Tucked in an academic building in rural Mount Vernon, Wash., outside of Seattle, master bakers research different varieties of bread in what's known as the Bread Lab. Stephen Jones, a grain breeder, and his staff of bakers are attempting to create healthy, delicious loaves that will have Americans falling in love with bread again in a gluten-free society.
