Nearly 24 million American adults are on low-carb diets, which have become "a mainstream phenomenon," according to estimates based on a recent survey. Food manufacturers have noticed and are changing the way food is made and sold, but doctors caution low-carb, high-protein diets can lead to heart disease and kidney problems.
