Chefs cook up ideas, connections at South Beach Festival

The South Beach Wine & Food Festival, attended by the world's most famous chefs, has become an important opportunity for restaurateurs from out of town to scout Miami locations and for new Miami restaurants to raise their profiles, festival co-founder Lee Brian Schrager said. For chef David Bouley, the festival was the catalyst that caused him to open Evolution at the Ritz-Carlton, South Beach in December, and he credits the festival with giving him the opportunity to introduce risky concepts.
