Ray Daniels has devoted his career to beer since immersing himself in beer-making classes at Chicago's Siebel Institute of Technology in the 1980s. Daniels runs the Craft Beer Institute, which offers classes and three levels of certification, from beer servers to "cicerones" qualified to act as beer sommeliers. "In the wine world, people get all snobby about their knowledge. We're trying to avoid that. I want the cicerones to be guides, not gods," Daniels said.
