Once-depleted schools of yellow perch are making a comeback in the Chesapeake Bay, and proving a boon to chefs at about a dozen Washington, D.C.-area restaurants. At Dino, chef-owner Dean Gold wraps the roe from the seasonal catch in bacon, pan-fries it next to the fish, and serves the dish with sage and lemon salsa.
