Local-food trend creates demand for a commercial kitchen

Lisa Sutton started a shared commercial kitchen in Amesbury, Mass., to give local food entrepreneurs the chance to expand their operations as they tap into the local-food movement. Chefs can rent cooking space for $20 an hour, and they get access to work tables, sinks and other necessities. Sutton discovered demand for the facility as she researched starting her own quiche business.
