Lent feasts don't have to be synonymous with deep fried fishes -- pan-fried or oven-fried fish offer quick and simple alternatives. CIA graduate Chad Lauderbaugh became hooked on fish after working with many chefs who loved the food item, and he touts it because "It's healthy, and it goes with any grains, starches or vegetables."
