Restaurants train servers to "read" the table

The best waiters in fine-dining eateries learn to quickly size up patrons based on body language and other clues and tailor their service accordingly. "Reading the table" is a skill that lower-priced casual chains, including Denny's and T.G.I. Friday's, have started teaching their servers as well as they look to perfect service that will set them apart from the crowd.
