Black garlic, created by a patented month-long curing process, is quickly gaining popularity with chefs who like its slightly sweet taste and chewy texture. Scott Kim, who began developing the product in South Korea in 2004, recently formed Black Garlic Inc., to make and sell it in the U.S.
