For a better steak, just add onions

Onions, whether pureed, fried, grilled or caramelized, are the perfect partner to rich red meat, writes chef James O'Donnell of Michael Jordan's Steak House in Chicago. For heavily marbled cuts, O'Donnell recommends using pickled onions to offset the fat, but be sure to top leaner cuts with onion puree to add a jolt of flavor.
