Researcher: Nutrients declining in fruits and vegetables

The nutritional value of fruits and vegetables is on the wane, according to a University of Texas biochemist. Though he cautioned that produce is still a vital source for nutrients, research shows a marked dropoff in levels of protein, calcium, phosphorus, iron, riboflavin and vitamin C.
