Allergies, illnesses create market for restaurants, manufacturers

The growing number of Americans with food allergies and illnesses such as celiac disease has provided a growing market for food manufacturers, restaurants and specialty stores to create products and menus for this group. "I no longer feel deprived or that I'm 'living without,'" says a celiac patient and publisher of a magazine for people with food sensitivities.
