Custom ice heats up as a cocktail trend

At least two Philadelphia restaurants are chipping custom bits of ice off outsized blocks for use in cocktails. Bartenders say they are inspired by pre-Prohibition-era cocktails, and note that larger blocks of ice melt more slowly, so drinks stay cold without getting diluted.
