Bartenders craft custom ice for cool cocktails

Ice is an important cocktail ingredient because purer ice melts more slowly and doesn't impact taste as much. Bartenders are experimenting with new ways to chill drinks, such as adding ground pepper to the cubes at Delicia or using different sizes and shapes of ice at Plat 99, both in Indianapolis. "Just like a golfer uses a driver off the tee and a wedge when stuck in a sand pit, different drinks call for different ice," said Plat 99 bartender Dakota Blanken.
