Cruise lines create new menus based on changing tastes

River cruise-line companies including Viking River Cruises are investing in food and wine training for their culinary staffs, with an eye on updating on-board cuisine. "Food is an absolutely integral part of the entire river cruise experience," said executive Joost Ouendag. "We don't see it as detached from the rest of the cruise. It is connected with the landscape, the traditions and the people along the rivers."
