Camembert cheese might face change

One Normandy, France, milk cooperative that produces camembert cheese wants to switch to micro-filtered milk, but doing so would cost it its Appellation d'Origine Controlee-certified label. The cooperative has asked the National Institute for Origin and Quality to change the AOC rules for camembert cheese, which is made with raw milk that is unpasteurized and unsterilized.
