Artificial sweeteners are huge business, especially in a more carb-conscious America, but none of the current crop of sugar substitutes tastes quite like the real thing, and none are as versatile as real sugar. Researchers continue to seek the holy grail of artificial sweeteners: one that will activate both sweet-flavor taste receptors on the human tongue.
