Gourmet-cupcake trend perseveres

Several years after specialty-cupcake shops began to bloom on both coasts, the trend has spread to the country's midsection. Cupcake bakeries and franchises have also upped the ante in terms of innovation. Just Baked offers a cupcake called the Fat Elvis, a banana cake cupcake with peanut-butter frosting and homemade ganache, while diners at Megan's Cupcakes can enjoy a tiramisu cupcake drizzled with a Kahlua syrup, espresso and chocolate syrup and topped with mocha buttercream frosting and chocolate shavings.
