Innovation drives sales in deli department

To increase deli sales, operators should focus on getting current deli customers to spend more, according to T Fuqua, brand manager for Tyson Foods, a participant in a recent Supermarket News webinar. Nielsen Perishables Group indicated that customers look for four types of items in the deli section: healthy, convenience, premium/indulgent or multicultural/global. "Sixty-nine percent of deli snack sales come from items that have some sort of declared health benefit," said Sarah Schmansky, director of account services for Nielsen.
