Chinese consumers have replaced pork with chicken as the staple meat, with per-capita consumption in urban areas up 219% between 1983 and 2006. The shift began roughly about the time KFC opened the first of its 3,900 eateries in the country. The Yum! Brands-owned chain's experience is the latest example of the many ways U.S. quickservice franchises are driving dining shifts in international markets, writes Melanie Warner.
