Chicago-area chef sees the science in cooking

George Zimmett, chef at Brockway Chophouse in Palatine, Ill., switched courses after studying physics at Fredonia University in New York and decided to pursue culinary sciences instead. "I like to cook food more than I like to eat," he said. "I just didn't think of it as a career at first."
