Haystack Mountain Goat Dairy near Boulder, Colo., has grown from a startup with five goats to an award-winning cheese brand sold at Whole Foods, and as of last week, it's the exclusive chevre at Denver-based salad chain MAD Greens' 11 restaurants. Sales and marketing director John Scaggs dishes on the advantages of goat's milk and tells how the MAD Greens deal came about.
