Extending shelf lives naturally

Researchers in the U.K. have found that some naturally occurring bacteria can extend the shelf life of products including fruit juices, beef and fish. When combined with variables including pH, water activity and temperature, the addition of Listeria monocytogenes and Penicillium chrysogenum prevented growth of other pathogens.
