Olive oil is going the way of wines with boutiques offering tastings of different varieties. Unique flavor characteristics come from how the oil is fermented. An instructor with The CIA says he often uses olive oil as a butter alternative. "Find some great toast, spread it with olive oil, marmalade, and then salt," he said.
