Can small plates replace the entree?

A debate is heating up among chefs and food critics over the question of whether tapas, appetizers and other small-plate dishes are pushing the traditional entree off the table. At New York City's Empellon Cocina, chef Alex Stupak has removed entrees from the menu. Meanwhile, some critics including Pete Wells say a meal made entirely of small plates leaves the diner less than satisfied.
