Planning school meals takes time, food-service director says

Planning school menus takes about two months of advance work, paying close attention to nutrition requirements for each age group, said Peggy Kelly, Head of Food Service in an Iowa school district. She said schools are working to reduce sodium and make many items from scratch. "We make our own pizza, chili chips, sloppy joes, taco salad, baked beans, cinnamon rolls, cookies, goulash, corn bread and bread sticks," Kelly said. "I have excellent cooks that make excellent food."
