Mezcal's tasting notes are similar to wine's, Del Maguey founder says

Mexico's homemade mezcal traces each unique version back generations to different villages and is worthy of the vintners' taste to adequately describe experience, says Del Maguey founder Ron Cooper. Differences between villages where Del Maguey sources its many single-village mezcals create a wide range of taste profiles thanks to elevation changes, soil attributes and 28 plant varieties. "The vocabulary of mezcal is more like the vocabulary of wine than spirits," said Cooper.
