Chefs talk American cuisine trends

Top chefs discussed the changes in American cuisine during a panel hosted by the CIA. The biggest changes in consumers' palates, they said, was their inclination toward uncommon, fresh ingredients and regionally-influenced styles of cooking. "People are very excited about discovering new ingredients," Wolfgang Puck said.
