From carpenter to culinary instructor

Mark Elia isn't your ordinary butcher. He began his career as a carpenter, but decided to pursue a career in meat processing when the economy took a turn. A fast learner, Elia quickly moved up the ranks at the butcher shop until he opened his own deli and catering business. Elia is now sharing his skills with CIA students as a lecturing instructor.
