Spontaneity of catering adds spice to chef's task

Most chefs are attached to their kitchens, but New Yorker Joseph Jenkins enjoys the challenge of cooking in a new place every night. "You have to be like MacGyver in the kitchen," the 45-year-old says of catering. "Sometimes a utensil or a part gets left behind, and you have to come up with a creative solution."
